It all started when…

Pork or Chicken Glaze:

Use as a glaze for roasted pork or chicken. The sweet-tart combination works well with savory meats, and the cinnamon adds a subtle depth.

I also am imagining it as a window into a rolled loin of pork or belly, with salt, black pepper and fresh oregano or young fresh rosemary, all rolled up and roasted.

Richards Cheese Pairing:

Serve with soft cheeses like brie or ricotta. The jam contrasts beautifully with the creamy texture of these cheeses.

Buttery Thumbprint Cookies

1 cup unsalted butter, softened

1/2 cup granulated sugar

1 egg yolk

1 tsp vanilla

2 cups all-purpose flour

1/4 tsp salt

Jam Lady Jam Rhubarb Cinnamon Jam

  • Preheat oven 180c

  • Cream together the butter and sugar until light and fluffy. Add the egg yolk and vanilla, and mix until well combined.

  • In a separate bowl, whisk together flour and salt. Gradually add the dry mixture to the butter mixture until a dough forms.

  • Roll dough into 1-inch balls and place on a baking sheet lined with parchment paper. Press your thumb or a spoon into the centre of each to create an indent.

  • Fill each indentation with about 1/2 tsp of Jam Lady Jam Rhubarb Cinnamon Jam.

  • Bake the cookies for 12-15 minutes, until the edges are golden.  Let cool before serving!
