Rhubarb Cinnamon
It all started when…
Pork or Chicken Glaze:
Use as a glaze for roasted pork or chicken. The sweet-tart combination works well with savory meats, and the cinnamon adds a subtle depth.
I also am imagining it as a window into a rolled loin of pork or belly, with salt, black pepper and fresh oregano or young fresh rosemary, all rolled up and roasted.
Richards Cheese Pairing:
Serve with soft cheeses like brie or ricotta. The jam contrasts beautifully with the creamy texture of these cheeses.
Buttery Thumbprint Cookies
1 cup unsalted butter, softened
1/2 cup granulated sugar
1 egg yolk
1 tsp vanilla
2 cups all-purpose flour
1/4 tsp salt
Jam Lady Jam Rhubarb Cinnamon Jam
Preheat oven 180c
Cream together the butter and sugar until light and fluffy. Add the egg yolk and vanilla, and mix until well combined.
In a separate bowl, whisk together flour and salt. Gradually add the dry mixture to the butter mixture until a dough forms.
Roll dough into 1-inch balls and place on a baking sheet lined with parchment paper. Press your thumb or a spoon into the centre of each to create an indent.
Fill each indentation with about 1/2 tsp of Jam Lady Jam Rhubarb Cinnamon Jam.
Bake the cookies for 12-15 minutes, until the edges are golden. Let cool before serving!
