Lime Marmalade
It all started when…
As I always say, Sherbet for Grown Ups!
Breakfast Gimlet
75ml Dry Gin (Melbourne Gin Co for the win)
10ml Schweppes Lime Cordial
2 tsp Jam Lady Jam Lime Marmalade
10ml Lime Juice
Stir JLJ Lime Marmalade with gin in a cocktail shaker
Add cordial & lime juice
Shake with ice
Strain into a martini glass
Lime Marmalade Glazed Salmon
4 salmon fillets
3 tbsp Jam Lady Jam Lime Marmalade
1 tbsp soy sauce
1 tbsp olive oil
1 tsp fresh ginger, minced
1 clove garlic, minced
In a bowl, mix Lime Marmalade, soy sauce, olive oil, ginger, and garlic.
Brush the glaze generously over the salmon fillets.
Preheat your oven to 190°C or heat a grill. Bake or grill the salmon for 10-12 minutes, or until cooked through.
Serve with steamed vegetables or rice.
Lime Marmalade & Coconut Muffins
1/2 cup Jam Lady Jam Lime Marmalade
1 1/2 cups plain flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/3 cup shredded coconut
1/2 cup sugar
1/3 cup vegetable oil
1 large egg
1/2 cup milk
Preheat oven to 175°C.
In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, mix the oil, sugar, egg, and milk.
Stir in the Lime Marmalade and shredded coconut.
Fill muffin tins with batter and bake for 18-20 minutes or until a toothpick inserted comes out clean.
