Lime Marmalade

 
 

It all started when…

As I always say, Sherbet for Grown Ups!

Breakfast Gimlet

75ml Dry Gin (Melbourne Gin Co for the win)

10ml Schweppes Lime Cordial

2 tsp Jam Lady Jam Lime Marmalade

10ml Lime Juice

  • Stir JLJ Lime Marmalade with gin in a cocktail shaker

  • Add cordial & lime juice

  • Shake with ice

  • Strain into a martini glass

 

Lime Marmalade Glazed Salmon

 4 salmon fillets

3 tbsp Jam Lady Jam Lime Marmalade

1 tbsp soy sauce

1 tbsp olive oil

1 tsp fresh ginger, minced

1 clove garlic, minced

  • In a bowl, mix Lime Marmalade, soy sauce, olive oil, ginger, and garlic.

  • Brush the glaze generously over the salmon fillets.

  • Preheat your oven to 190°C or heat a grill. Bake or grill the salmon for 10-12 minutes, or until cooked through.

  • Serve with steamed vegetables or rice.

 

Lime Marmalade & Coconut Muffins

 1/2 cup Jam Lady Jam Lime Marmalade

1 1/2 cups plain flour

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/3 cup shredded coconut

1/2 cup sugar

1/3 cup vegetable oil

1 large egg

1/2 cup milk

  • Preheat oven to 175°C.

  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt. In another bowl, mix the oil, sugar, egg, and milk.

  • Stir in the Lime Marmalade and shredded coconut.

  • Fill muffin tins with batter and bake for 18-20 minutes or until a toothpick inserted comes out clean.
