PEAR VANILLA GINGER
There is a small window in February every year, when William Bartlett pears are beautifully fragrant, and juicy, which makes for a velvety jam and is fantastic served up with all types of cheeses.
MARINADE - ROLLED PORK LOIN/BELLY for Roasting
½ jar of Pear Vanilla Ginger
2 cloves of garlic, crushed
1 teaspoons grated ginger
1 teaspoon lemon zest
Juice of a lemon
Salt & Pepper
Generous teaspoon of smoked paprika, ground fennel & dried sage
Generous tablespoon of Olive oil and sherry vinegar
In a dish swish all ingredients together add your pork cut leave for a few hours or overnight.
BLUE CHEESE AND PEAR VANILLA GINGER TARTLET –
AS A DESSERT OR CANAPE
Great blue cheese - Gorgonzola or Roquefort

Pre cook or pre buy some tart cases
Smear Pear Vanilla Ginger on the bottom of the tart cases, crumble your blue cheese of choice on top, dessert is made!
For a canapé. Add the Sherry & Onion after the Pear Vanilla Ginger, then blue cheese, grind of black pepper, sprig of parsley
